Flying Dutchman - Rum Barrel Aged Imperial Stout - 11% ABV 

Flying Dutchman is an enchanting journey into the rich, dark delights of an Imperial Stout aged in Dark Rum Barrels for 36 months. The first impression is an irresistible bouquet of roasted malt, reminiscent of espresso and dark chocolate, layered with whispers of caramelized sugar. As you dive deeper, the character of the extensive rum barrel aging process begins to emerge-notes of molasses, toffee, oak, and dried fruit, particularly raisins and figs, along with a touch of smokiness, dance harmoniously with the base stout's profile. Even more barrel character imparts a velvety smoothness and silky texture that elevate the profile, adding warm notes of vanilla, coconut, and subtle spice that dance on the tongue, making each sip more decadent and satisfying than the last. Fly away with the Flying Dutchman, where every drop is an exploration of bold flavors and rich traditions

Tiki LTL Scorpion - Kettle Sour Cocktail - 4.4%

Our brewers cooked up a one shot keg of Tiki Long Tongue Liar that riffs off the Scorpion cocktail! Fresh grapefruit, lime, cinnamon, and Demerara sing to each other in this kettle sour with a fresh juicy vibe.

Vox

German Pilsner 4.9%

A light, crisp, and super clean German Style Pilsner. Notes of cracker, subtle malt sweetness with a lingering floral noble hop character from start to finish.

WEST COAST WIZARD

West Coast IPA 6.3%

Classic resinous hop tones meld with impressions of ripe melon and peach in this bright, easy drinking West coast IPA. Get back to your roots!

Czech-style Pale Lager - 3.9%

A respected deity of light and sun, is a 3.9% Czech Pale Lager. It starts with a softer water profile. Traditional floor malted Bohemian Pilsner malt, which gives intense earthy malt notes of biscuit and honey. The subtle yet beautiful Czech Saaz hops offer woodsy, earthy, and floral elegance. The backbone of any Czech Pilsner is a yeast that compliments its well-balanced light malty finish and subtle earthy hop bitterness. Combine all this with slow steady fermentation, spunded for a naturally carbonated beer, and lagered for months to bring out the best of this historically classic Czech Pale Lager.

Kottbusser - 6.1%

Brewed with a blend of Smitty Bee buckwheat honey and dark amber wildflower honey, oats, wheat, and a kiss of chocolate malt, this Kottbusser entices with rich sweetness and sophisticated aromas. Pouring a deep amber to chestnut brown, this Kottbusser presents a warm glow that captures the light beautifully. A fluffy tan head forms upon pouring, offering good retention and leaving delicate lace on the glass. The slightly hazy body hints at its natural ingredients.

PIT LORD

“Pit Lord” collab w/ Kumas Corner and Vox & Hops - New Zealand Pilsner - 4.82% ABV

Pit Lord is a New Zealand Pilsner that pours a radiant pale straw color, featuring a crystal-clear body and a frothy white head that dissipates like sweat rising from an electrifying mosh pit. Its lively effervescence mirrors the vibrant energy of a concert, with rising bubbles enticing the eye. The aroma bursts with tropical fruit and citrus from Nelson Sauvin, Wakatu, and Taiheke hops, offering notes of gooseberry, passionfruit, and lime, alongside a hint of sweet malt reminiscent of a concert encore.

Kettle Sour - 4.4%

A juicy, tart, and prickly dry-hopped kettle sour brewed with fresh plum puree. We complement the fruit with a generous whirlpool of Comet hops to infuse bright citrusy notes, zesty grapefruit, and a hint of herbal pine. As the sourness settles, the fermentation of fresh plum puree bursts forth, delivering a juicy, luscious flavor and delicate sweetness that balances out the acidity, evoking memories of biting into a perfectly ripe fruit. Hints of lime and lemon peel provide a zesty brightness, enhancing the overall refreshing quality of the beer. As it finishes, the dry hopping with Ariana hops introduces a nuanced layer of complexity, with delicate floral aromas and soft peach-like sweetness that linger, inviting you to take another sip.

Mango Kettle Sour - 4.9%

A tropical, tart, and prickly dry-hopped kettle sour brewed with fresh mango puree. Fermented with luscious fresh mango puree, each sip bursts with juicy mango, the tropical sweetness melds with the acidity, and a light dry hop at the end of fermentation accentuates sweet mango, with additional layers of grapefruit, herbal lemongrass, and zesty citrus.

Peanut Butter Cup Imperial Stout - 11.5%

Notes of toffee, caramel, roasted nuts, vanilla, and anise add to the luxurious profile. Upon the first sip, your palate is enveloped in a rich interplay of flavors. The deep, roasted malt backbone provides a velvety mouthfeel, while bittersweet dark chocolate creates an indulgent base. Creamy peanut butter takes center stage, with a touch of salt balancing the sweetness. Undertones of caramel and dark fruit `add complexity, while a whisper of coffee grounds the brew with a roasted finish. This combination crafts a taste experience reminiscent of a gourmet salted chocolate peanut butter cup.

 

MOUNTAIN KING

Hazy IPA - 7.1% ABV

Far away, in a land caught between time and space. Where the books of life lay. Within this castle of stone, the Mountain King roams. Pouring a beautiful golden-yellow hue, reminiscent of the sunlit meadows, it exhibits a soft, cloudy haze that pulls you into its intoxicating bouquet of zesty citrus zing and floral tropical juiciness. Underneath the bright, sweet citrus notes of oranges, grapefruit, clementines, and lime lie pastels of peaches, melon, and mango, all perfectly complemented by the grassy, piney resinous character of Topaz hops and the floral, tropical spice notes of Ella hops.

Double Hazy IPA - 8%

Embark on a flavorful quest with Storm Giant, a captivating Hazy Double IPA inspired by the mythical powers of these thunderous titans. This brew engages the senses with an alluring haze, reminiscent of gathering storm clouds. Cascading bubbles dance gracefully to create a frothy white head, hinting at the effervescent adventure that awaits. The aroma bursts forth with an intense bouquet of tropical fruits and citrus, presenting a vibrant mix of ripe pineapple, fresh mango, electric berry sweetness, and luscious peach with a subtle hint of pine and herbal undertones. Its malt backbone and touch of sweetness lends a creamy and smooth mouthfeel that contrasts with the bold hop character. Waves of juicy fruit deliver a punch of candied pineapple, fresh peach, nuanced berries, grapefruit, and lemon peel, weaving a tapestry of juicy complexity that dances on the tongue. The finish is a wondrous potion of lingering tropical flavors, sweet berries, and a hint of resinous pine.

VALKYRIE

Hazy IPA - 7% ABV

Valkyrie has returned from the war torn battlefield with a beer Odin would bless himself. She flies in with everything you’d expect in a Hazy IPA as she only seeks the finest hops worthy of Valhalla. Bru-1, Bru-1 Lupomaxx. Nelson Sauvin, and Motueka await. Fresh cut juicy pineapple, white wine grape, mango, papaya, lime zest, stone fruit, and sweet melon are packed into this beer. Bitter resinous pine and lemongrass clean out the pallet. Needless to say, your own version of Valhalla is waiting for you at the end of this trip. Enjoy.

WATCHER IN THE WOODS

Dunckel Lager - 5.3% ABV

This rich lager encapsulates the spirit of the forest, embodying the intricate dance of light and shadow found in the woods at twilight. It pours a deep, alluring mahogany with ruby highlights, creating a vivid contrast against the glass. A creamy, off-white head is dense and persistent, leaving a delicate lace as it slowly recedes. The aroma greets you with sweet scents of caramel and toffee, interwoven with toasted bread and a hint of dark chocolate, along with subtle undertones of roasted nuts and gentle herbs. CRAFTED IN A
DIFFERENT REALM

So many of the greatest beers in the world were markers on the journey to brew beer ourselves. They are instructive. They are canon. And we find enjoyment in devoting ourselves to the quest of their honorable replication.

But we also love a good glitch.

Riffing on tradition and interpreting styles in a new way enables us to tilt the board and brew with a twist. It’s our way of exploring the curiosities that make beer a constantly evolving idea.

But we’ll never fully know what lies beyond.

We only ever see the edges of our own world. Impossible glimpses of the universe. We toil away in the dark of new fermentation. We enjoy the anxiety of occasionally working in the realm of chaos, tasting something unexpected, unsettling, and if we try hard enough, maybe even unexplored.

Co-Founder and President

The Visionary. El Jefe. Forged by the American Brewers Guild. Josh is the co-founder and Demi-God of Bureaucratic Malevolence here at MBC. When not helping formulate new recipes and wrangling spreadsheets into submission, Josh is the dark figure lurking in the shadows, hoping to get you to try this new Danish boardgame where you play rival fishmongers. It’s totally fun, you guys…

JOHN WYZKIEWICZ

Co-Founder

The not-so-invisible hand. The oh-so-visible beard. John is also a graduate of the American Brewer’s Guild and cut his teeth at Goose Island and Gordon Biersch. You can find him in the back moving delicious liquid from place to place. When he’s not working, he’s likely at the end of the bar, arguing about the cultural and comedic significance of M*A*S*H (pre-Winchester) or sleeping…standing up…with his eyes open.

 

Cory Davidson

Head Brewer

Cory joined us in the Spring of 2019 as an assistant brewer, moving to head honcho summer of 2021. Bringing to the table his knowledge of brewing and production, he has helped balance out the flow of the day-to-day. When he isn’t brewing or tinkering around in the brewery, you can find him around town playing bass in his band, Fool’s Brew.

 

Mik Dempsey

Production Brewer

Since 2010 If he hasn’t been serving it or making it, he sure as hell has been drinking it. In August of ‘21, Mik brought more than a decade of craft beer passion to Miskatonic. While fully committed to keeping things moving on the brewing side, Mik loves reveling amongst the thirsty masses.

Darien Taproom Manager

Suzi had been working in the trenches behind the bar in the taproom for a while, but now she’s joined the team as our Taproom Manager. Suzi’s worked in the industry for almost 22 years, and these past 5 years she’s been exclusively slinging pints in breweries. Her favorite style of beer is IPA of all kinds. 

She loves performing in her band Black Road since 2015. When she’s not laying down the vibes behind a bar or on stage, she’ll be hanging out with her husband Tim and dog Scruffy. In addition to the liquid variety of deliciousness, Suzi loves to cook and is obsessed with tacos, hot sauce, and pizza.

Our taproom is a pint with a view. Open to the facility, a seat at the bar overlooks our brewhouse and cellar. Often you can find the brewers working away while you luxuriously enjoy your #LovecraftBeer.

 

For our bigger events, we have our barrel room space. a full-on behind the scenes experience here at the brewery. The barrel room is also available for private functions. Email events@miskatonicbrewing.com for more information.

We enjoy sharing our passion and getting you closer to the process. Having a drink here at the brewery is a great way to learn more about our beer and how it is brewed. It is a truly unique and interesting place to share a pint.

 

GROWLERS, OR HAPPINESS TO-GO

A growler is a portable, reusable to-go container for beer. We sell growlers in 64oz and 32 oz. sizes perfect for any occasion.

We happily fill growlers with most of our beers. If the beer has limited availability or is costly to brew, it may not be available in this form.

A few caveats:

  • The growler must be clean whether it’s ours or someone else’s, if it’s stinky, you no drinky.

  • When cleaning it, the best method is to rinse it with hot water as soon after you finish it as you can and let it air dry with the cap off. It’s OK if you lose the cap, we’ll give you a new one.

  • Growlers are not packaged like cans or bottles, they are meant for near-immediate consumption. After you leave with the growler, keep it cold. You can stash it in a fridge, cooler, or growler suit or use a double-walled stainless steel growler.

  • You can keep it this way for a couple of days, 3 at the most. Once you open it, you better finish it! It’s OK, it’s 4 pints, grab a friend or two and you’re good to go.

  • They are PERFECT for sharing at parties, BBQs, tailgates, hiking, backpacking, and the beach (those last two if you get the metal ones!)

 

DEFRAYAL OF CAPITAL…YOU KNOW, PAYMENT

We do not accept cash, only debit/credit cards for payment. It’s safer for our employees; it’s hard to stick up a hard drive and a modem. It’s also convenient, for us and you. No more stops at the ATM, head right on in. But, we are sorry for any inconvenience.

 

WHAT’S A DRINK WITHOUT A NOSH?

As a holder of a microbrewery license, we are prohibited from serving food made on our premises. We encourage our patrons to bring food or order from local restaurants for delivery to the taproom. Ask our bartenders for their favorite local bites!

 

YOU SUNK MY BATTLESHIP!

Feel free to peruse our collection of games. We have modern and classic, mind-numbing and brain-bending, it’s all right there on our game shelves. The inner taproom has a proper British bristle dart board, none of this plastic-tip, quarter-fed electronic stuff. It’s free, gloriously free. Don’t have your own fancy-schmancy darts? No problem, we have darts behind the bar for your airborne missile-based enjoyment.

 

OTHER RULES OF THE HOUSE

We are pet dog, cat, rat, & bat friendly. We ask you keep Fido/Fifi leashed & next to you. Water bowls will be provided upon request. Milk bones from the bartenders for those good doggies (or other creatures who enjoy a milk bone or two). Our rule is the same be it two- or four-legged patron, “if you behave, you can stay”

We are child- and kid-friendly as well. Soft drinks are available, cause they ain’t gettin’ no suds.

 

PARKING

Our lot on the North side of the building accommodates 26 cars. We also have an agreement with the building to our north (it is the mirror-image spot to the North of our lot) to park there after 5 pm during the week, and all day on the weekend (please, no moving any of our neighbor’s cones!). There is also street parking available on Wilmette Ave. (the street directly to the East of our building). Please do not park in the Ready, Set, Grow daycare at the end of our parking lot. There is signage there that indicates your car will be towed. We highly encourage you to get a ride with your friends so you can easily find parking and do less damage to our delicate environment.

Darien Brewery Tours & Private Events

Darien Brewery Tours

The Private tour requires a minimum of six in your group. For $35 per person, your group will get 4 5oz pours, an hour to an hour and a half guided tasting & tour and a 12oz pour of your choice to enjoy afterward.

These tours are great for birthday parties, bachelor/bachelorette parties, retirement parties or just because. We all need a beer now and again!

Please note that these tours and tasting do require to be set up in advanced. A 2-3 weeks notice is typically needed for staffing purposes.

 

Darien Private Events

Interested in hosting an event in our Darien barrel room? This space is the perfect location for parties of all sizes. We have tables and chairs for up to 60 and can rent more to accommodate seating for up to 120 people. If tables and chairs not needed, then we can easily have around 200 - 250 in the event. We also provide speakers, Jenga, and Bags (or cornhole if you so choose to call it) for you and your group.

You will have a bartender (or 2 depending on size) and privacy for your event. Pricing does vary depending on size, time, and if anything extra is required. You are also allowed to bring in your catering for your event. Don't have one and need one? We have a list of vendors that would be willing to work something out with you, with Naperville Craft Kitchen being added as an option soon!
