Crafted in a Different Realm
So many of the greatest beers in the world were markers on the journey to brew beer ourselves. They are instructive. They are canon. And we find enjoyment in devoting ourselves to the quest of their honorable replication.
But we also love a good glitch.
Riffing on tradition and interpreting styles in a new way enables us to tilt the board and brew with a twist. It’s our way of exploring the curiosities that make beer a constantly evolving idea.
But we’ll never fully know what lies beyond.
We only ever see the edges of our own world. Impossible glimpses of the universe. We toil away in the dark of new fermentation. We enjoy the anxiety of occasionally working in the realm of chaos. Tasting something unexpected, unsettling, and if we try hard enough, maybe even unexplored.
The Visionary. El Jefe. A Glorified Janitor. Forged by the American Brewers Guild and hammered into brewer shape by Two Brothers Brewing Company, Josh is the co-founder and Demi-God of Bureaucratic Malevolence here at MBC. When not helping formulate new recipes and wrangling our packaging equipment into submission, Josh is the dark figure lurking in the shadows, hoping to get you to try this new Danish boardgame where you play rival fishmongers. The not-so-invisible hand. The oh-so-visible beard. John is also a graduate of the American Brewer’s Guild and cut his teeth at Goose Island and Gordon Biersch. You can find him in the back moving delicious liquid from place to place. When he’s not working, he’s likely at the end of the bar, arguing about the cultural and comedic significance of M*A*S*H (pre-Winchester) or sleeping…standing up…with his eyes open.
Taproom Manager and Brewer
Josh and John wisely knew that they needed someone as friendly, more charismatic, and a hell of a lot less weird than them to be the one most likely to pull your pint across the copper-clad bar (AJ let’s us get near customers from time-to-time though). An avid home brewer since before he was old enough to rent a car, AJ also has experience as an award-winning affineur (it’s one who cares for and ages cheeses until they are ready for consumption). Dude knows fermentations of all kinds, so pull up a stool and chat with him.
